Eating healthy seems to be harder this time of year. In the summer, we’re snacking on fresh watermelon and peaches while feasting on grilled greens and corn on the cob. There’s still an abundance of seasonal produce this time of year but we’re finding we’re snacking more on dark chocolate, gingerbread houses, and peppermint lattes than whole foods. By the time we get home, it’s dark and we’re hungry and ready to jump in the bath rather than begin meal prepping.
So, if you’re like us, and you’re in need of some inspiration to keep things healthy this time of year, we’ve found 8 absolutely decadent and healthy recipes to keep those late night cravings for the side of a gingerbread house away.
First of all, how Instagram-worthy is this? We’d make this for the ‘gram alone but it looks like a heavenly combo of salty, sweet, creamy, and savoury even if we never have time to snap a pic. We also love the idea of doing something different than roasting our butternut squash like we always do!
Number reason to make this? Jambalaya is just fun to say. Second of all, we will us ANY opportunity to use our slow cooker. Prep the night before or the morning of and come home to dinner waiting for us? Yes, please!
Yes, this is called a ‘spring salad’ but with all those greens it could work for any season. And you know we’ll take any reason to add some spirulina to our dishes.
Lasagna is one of our all-time favourites but it isn’t usually the healthiest. This is the best of both worlds with lots of seasonal veggies and lots of ‘cheese’. We’d make a few of these on Sundays and freeze them to have ready during the week.
We’re a sucker for warm salads, it’s like we never expect a salad to be warm and it’s such a delight when we bite into it. This one is packed with protein, veggies, and sweet pomegranate seeds.
Another one that is perfect for Instagram! We love roasting a ton of veggies to have them on hand for salads or Buddha bowls like this. Perfect for packing while on the go too.
You had us with THAT COLOUR! Wow, this is a show-stopper and you really can’t go wrong with cauliflower. We bet this would be amazing for leftover lunch the next day too!
It’s always avocado season, right? Potatoes are a staple for us during the winter but we’re usually mashing or roasting them. Mix them with some avocado and dill? That sounds downright delightful.
